Here's a healthy lunch or snack for you to try...
Grab a loaf of Italian bread or something similar & cut it into slices (not too thin, but not too thick). Pop the slices onto a cookie sheet coated with cooking spray at about 350. Bake the bread for a few minutes, just until you see the top looking a bit toasted. Take out the slices & brush with olive oil.
Wash some fresh basil & put it on top of the bread slice along with a fresh slice of tomato & a fresh slice of mozzarella. Drizzle some balsamic vinegar overtop & voila! Done. Quick, easy & healthy. :)
